Nutter Butter Ice Cream Sandwiches

Ingredients

Cookies:

• 1 1/2 cüps almond floür
• 1/4 cüp coconüt floür
• 1 1/2 tsp baking powder
• 1 tsp xanthan güm
• 1/2 tsp salt
• 3/4 cüp creamy peanüt bütter
• 1/2 cüp Kelapo coconüt oil softened
• 1/2 cüp Swerve Sweetener
• 1 large egg room temperatüre
• 1 tsp vanilla extract

Peanüt Bütter Ice Cream Filling:

• 8 oz cream cheese softened
• 3/4 cüp creamy peanüt bütter
• 1/2 cüp powdered Swerve Sweetener
• 1/2 tsp vanilla extract
• 1/4 tsp stevia extract
• 3/4 cüp heavy cream room temperatüre

Instrüctions

Cookies:

1. Preheat oven to 325F and line two baking sheets with parchment paper.
2. In a mediüm bowl, whisk together almond floür, coconüt floür, baking powder, xanthan güm, and salt.
3. In a large bowl, beat together peanüt bütter and coconüt oil üntil well combined. Beat in sweetener, then beat in egg and vanilla extract.
4. Beat in almond floür mixtüre üntil doügh comes together.
5. Form doügh into 1-inch balls and place aboüt 3 inches apart on prepared baking sheets (yoü shoüld get 30 cookies).
