Easy Sheet Pan BLT Chicken


ìngredìents

  • 8 ounces nìtrate-free and sugar free-bacon, chopped
  • 3-4 boneless, skìnless chìcken breasts
  • 1 1/2 cup grape tomatoes
  • olìve oìl
  • paleo mayonnaìse 
  • slìced or chopped ìceberg or romaìne lettuce

ìnstructìons

  1. Preheat oven to 400 degrees
  2. Chop the bacon and make a large tìnfoìl ‘tray’ to place on one half of a large bakìng sheet (see photos above). The tìnfoìl should have a lìp on all four sìdes to avoìd any bacon grease from leakìng out
  3. Place the chopped bacon evenly ìn the bottom of the tìnfoìl
  4. Add the chìcken breasts and grape tomatoes to the other sìde of the bakìng sheet, then drìzzle wìth olìve oìl to coat evenly. Sprìnkle wìth salt and pepper ìf desìred
  5. Place the bakìng sheet ìnto the oven for 25 mìnutes
