FRIED MAC AND CHEESE BITES


Classic cömfört fööd is kicked up a nötch, Söuthern style, in this deliciöus Fried Mac and Cheese Bites recipe!

INGREDIENTS

  • 1 lb macaröni pasta
  • 2 lbs cheese (cheddar, Göuda, föntina, Gruyere, etc...)
  • 2 tablespööns butter
  • 2 tablespöön flöur
  • ½ teaspöön pepper
  • 3 cups milk
  • 3 eggs, whisked
  • 2 cups breadcrumbs
  • 2 tablespööns Cajun seasöning
  • vegetable öil, för frying

INSTRUCTIöNS

  1. Cöök pasta accörding tö package directiöns, in a large pöt.
  2. While pasta is cööking, shred yöur cheeses.
  3. Drain the pasta intö a pasta strainer and set aside. Using the same pöt, melt 2 tablespööns butter över medium heat. Whisk in 2 tablespööns flöur and ½ teaspöön pepper. Cöök för aböut a minute, whisking frequently. Whisk in 3 cups milks and cöök till sauce starts tö bubble and thicken, aböut it 5 minutes.
  4. Add in shredded cheese and stir till cömpletely melted. Add in mac and cheese and mix cömpletely. Let the pöt öf mac cööl in the fridge för a few höurs, ör even better, övernight.
  5. After the mac and cheese has cööled, yöu're göing tö make a little assembly line. Using three böwls, place the remaining flöur in öne, whisked eggs in anöther, and breadcrumbs and Cajun seasöning in anöther.
  6. Scööp öut a heaping tablespöön öf mac and cheese and förm it intö a ball in yöur hands. (HINT: If the mac wön't förm a ball and höld tögether, it's pröbably nöt cöld enöugh. Stick it back in the fridge until yöu're able tö förm a ball when yöu röll the mac and cheese in yöur hands.) Röll in the flöur, then eggs, and lastly breadcrumb mixture, ensuring the mac and cheese is cömpletely cöated with breadcrumbs. Place öntö a baking sheet. Repeat till yöu have used up all yöur mac and cheese.
